An adjustable V-gouge is used to cut V shaped gouges in a piece of leather, usually to make it easier to fold. It is a small steel tool with a V-shaped blade that protrudes at an angle from the bottom. A small knob on top of the tool is turned to raise and lower the blade. This makes it possible to have a wide range of gouge depths and widths.
